Coconut & Orange Energy Balls

Have you ever opened the fridge to look for something super yummy AND guilt-free, but there is nothing that ticks both boxes? Well, it has happened to me gazillions of times until I created these amazing energy balls that can be made in 15 minutes including washing time. All you need is a food processor, 4 ingredients, a container and a fridge to store them if you don't devour them all in one go.

They're perfect pick-me up snacks thanks to the almonds and the coconut, rich in magnesium and potassium. The dates function as natural sweetener that avoids the sugar slump in your blood stream and the orange zest gives that special touch and freshness in each mouthful.

They're also an awesome match with your coffee, as the sweetness of the dates marries very well with the bitterness and rich flavor of the roasted dark bean.

To make them even more decadent dip them into high quality dark chocolate and sprinkle the top with some extra coconut flakes.

 

 

 

Ingredients (15-17 balls)

13 medjool dates pitted

3/4 cup almond meal

1/3 unsweetened desiccated coconut

2 tbs water

zest of one orange

 

Method

Mix all the ingredients in a food processor apart from the orange zest. Blend everything until you don't see any big bits of dates. Add the orange zest and blitz for a few more seconds. With the mixture form 15-17 balls. If you want the energy balls to be a lot firmer, let them rest in the fridge for half an hour before serving.
